Description

Riogordo's gastronomy is a reflection of its rural identity and the richness of its natural surroundings. With its roots deeply linked to the peasant tradition, its cuisine is based on high quality local products, many of which come from the orchards, olive groves and artisan livestock farming. Humble but tasty dishes, prepared with care, make up a gastronomic heritage that forms an essential part of the municipality's culture.

Riogordo's most emblematic dish is snails in broth, a unique recipe that is enjoyed especially between the months of May and August. Its preparation, with an aromatic broth full of nuances, is a local symbol. Since 2003, every last Sunday in May, Riogordo celebrates the Fiesta del Caracol (Snail Festival), declared a Festival of Special Tourist Interest by the Diputación de Málaga. During this day, thousands of visitors enjoy tastings in a festive atmosphere, accompanied by music and cultural activities.

The traditional cuisine of Rioja includes recipes that have been passed down from generation to generation. These include migas (fried breadcrumbs), ajoblanco, tagarninas stew, porra campesina (country casserole) and gazpacho de habas verdes (green bean gazpacho).

Porra campesina has the particularity of being thicker than the rest of the gazpachos. It is a mixture of simple gazpacho without water and salmorejo, and is usually served with boiled eggs, cured ham and torreznos.

Gazpacho de habas verdes, commonly known as "gazpacho de los tres golpes", is made with whole broad beans, tomato, fennel, pepper, spring onion and bread, all chopped into small portions, and seasoned with olive oil, vinegar and salt.

These dishes make use of local produce and are an example of healthy and sustainable cooking.

Riogordo has several cooperative olive oil mills that produce extra virgin olive oil of renowned quality, following traditional methods that respect the fruit and the environment. This oil, authentic liquid gold, is the protagonist of most local recipes. The municipality also preserves a rich tradition in the production of artisan cured meats and sausages, as well as other products from the countryside such as dried peppers, pulses, paprika, hawthorn mushrooms and home-made preserves.

Traditional sweets and hazelnut horchata The confectionery of Riogordo offers a wide variety of typical handmade sweets. Of particular note are the roscos de aceite, tortas de aceite, magdalenas, borrachuelos, mantecados, hornazos and palillos. Amongst its specialities there is also a hazelnut (or peanut) horchata, a traditional, refreshing drink with an unmistakable flavour that forms part of the most authentic recipe book of the municipality.
