Description

Most of the typical gastronomy of Alfarnateña is the result of scarcity and turns necessity into an art. The dishes are created by making the most of all the food available, the imagination and the love of a few hands.

It is characterised by its mountain gastronomy, which is fundamentally based on mountain and Andalusian country cooking and where traditional recipes make its cuisine a treasure to be discovered:

 

Chachorreñas soup. This soup is made with garlic bread, dried peppers (known as "Cachorreñas"), chilli, olive oil, orange peel and water. The result is a thick and hearty soup, perfect for cold days.

 

Gazpachuelo. This dish consists of a fish stock base enriched with a homemade mayonnaise emulsion to which boiled potatoes and, in some versions, pieces of fish, seafood or bread are added.

 

Roscos carreros. These doughnuts are made with a dough based on flour, olive oil, sugar and aniseed and flavoured with cinnamon and lemon zest. After being shaped into a doughnut shape, they are baked until golden brown. They are ideal with coffee or tea.                                                  

 

Resoli. This liqueur is made by macerating ground coffee, aniseed, spices and brandy, resulting in an aromatic and sweet drink, ideal for after meals. It is known under the brand name 'Licor de la Abuela' in this municipality.
