Description

The main characteristic of Almáchar's typical cuisine is that it is made with local produce, grown and raised by its neighbours, making each of the dishes described below a delight to the palate. Typical dishes include:

Ajoblanco

This dish is a cold soup of garlic, almonds and bread, sometimes accompanied by a bunch of Muscat grapes from Alexandria.

Maimones

This typical soup was for a long time the main sustenance of the most humble families in the village, due to its simplicity, low cost and use of garden produce, and it also has a high caloric content, which helped to cope with the cold and the hard work of agriculture or transhumant livestock farming.

More cabbages

The basic ingredients of this dish are products from the coldest season of the year, accompanied by products derived from the typical slaughter of the rural area in the past (some people still keep it), which was carried out at the end of the summer season in order to have quality, nutritious and calorically dense food, to be able to face the adversities of autumn/winter. All the ingredients of this dish were grown/raised by the villagers on their own land, with organic vegetables and free-range animals, which has become very popular in recent years.
