Carob

The gastronomy of Algarrobo is characterised by its rich Mediterranean tradition and the use of local products. Dishes are based on fresh Mediterranean fish, local vegetables and extra virgin olive oil. Among its specialities are ajoblanco, migas and gazpacho and traditional stews made with local ingredients.

One of the most emblematic products are the famous Algarrobo cakes. These pastry delicacies are thin, crunchy and slightly aniseed-flavoured. They are made with flour, sugar, olive oil, almonds, aniseed and sesame, following traditional recipes handed down from generation to generation. The 'tortas de Algarrobo' are highly appreciated both locally and in other regions, and are a symbol of the tradition and flavour of this municipality in the Axáqua region.
