Frigiliana

The "cane honey" of Frigiliana is a natural product with a honeyed texture and sweet taste, which comes from sugar cane (saccharum officinarum), a plant from Southeast Asia.

It has been in Spain since the beginning of the 8th century and nowadays some small plantations can be seen in some regions of the coast of Malaga and Granada.

Its name permitted by European legislation is SUGAR CANE JUICE CONCENTRATE. It is very versatile in traditional and modern cuisine. Used as a sweetener, ingredient in sauces, salad dressings, fried foods, tempura. It combines very well with dairy products and acid fruits and is indispensable in many typical Andalusian dishes. It is also widely used as a medicinal ingredient.

It has been produced in Frigiliana since 1630, and the "INGENIO NUESTRA SEÑORA DEL CARMEN" is the last remaining traditional factory in Continental Europe that has been producing this product since 1725 with the same ancestral recipe.
