Moclinejo

Description

The typical gastronomy of Moclinejo is characterised by traditional Andalusian dishes with Arab and Mediterranean influences. The vineyards and raisins are the typical frame where the grapes have to be dried in the sun, a basic element of the Axarquia that gives life and fame to these localities. The exceptional climate favours the vineyards which produce special grapes.

Typical dishes include ajoblanco, a cold soup of almonds, garlic and bread, which is very popular in the region, gazpachuelo, typical of the summer months, consisting of a rich soup of water, bread and egg white, to which is added a mayonnaise sauce previously diluted in a little of the same broth, migas, sopa de maimones and sirloin with sultanas.

Vegetable stews, gazpacho and fresh salads are also common.

As far as confectionery is concerned, the most outstanding are the wine doughnuts, oil cakes and sweets made with almonds and mie and the borrachuelos.

Sultanas are a typical product of the area and muscatel wines are the perfect accompaniment to these dishes.
