La Viñuela

Description

The typical gastronomy of La Viñuela is characterised by its Mediterranean influence and the use of local products, with olive oil being the main dressing for its dishes, where the oil from Los Romanes, anejo de Viñuela, is of special importance.

It is based fundamentally on local produce and game dishes, which are abundant in the area, especially goat. Dishes such as ajoblanco, a cold soup made with almonds, garlic, bread, olive oil and grapes, stand out. Gazpacho is also common, ideal for hot days. Among the traditional stews, the cabbage stew, prepared with vegetables, pulses and pork, stands out. Homemade sausages, suckling goat from Malaga, gazpachuelo, migas, olla de pringá and tomato soup are other typical local dishes, as well as tortas de aceite (olive oil cakes) as pastries. Local wines and sultanas from the Axarquia region are enjoyed to accompany these dishes.
